Happy Friday y’all! In case you weren’t aware, Friday is my favorite day of the week (who doesn’t love the Weekend?) I’m finally slowing down on the job hunt… went on a bunch of interviews this week so now we wait.

Both me and Elliott have this weekend so I plan to spend 100% of my quality time relaxing with him. Tomorrow we’ll hike up north and then finish with lunch at a cafe in Lake George, the cutest little resort town. The past two weekends have been packed with friends and activities so im excited to keep things low key.

And fathers day is Sunday in case anyone forgot! Ive planned a fishing trip with my dad, Elliott has a golfing trip with his. Perfect! At the end of this post, I’ll include some great last-minute gifts.

Things I’m loving this weekend…

Friday: im all about a nice white Riesling, 50 shades of grey (what, i read the books therefore i need to see the movie), and cheeseburger pizza. As for the pizza, if you haven’t had it you are missing out!

Saturday: I start off every Saturday with a nice long workout, it gets me going early and makes me feel super productive. My current favorite inspirational workout tracks are

Favorite Beauty Product: St. Tropez 1 Hour Tan.  I got this product in my monthly Allure Beauty Box and was instantly in love. It smells great, and develops almost instantly, simply apply the foam formula (use mitt or gloves) to entire body and wait one to 3 hours before showering. One hour gives a light tan, two is medium, and three is dark. Wash off and you’re good to go!

Sunday:  usually on Sunday’s we lounge and keep things simple. My favorite things to do are to cook an indulgent brunch together, stroll through the local farmers market, or meet up with family.

Coconut French Toast.
In a shallow baking dish, whisk 5 large eggs, 1 can (14 oz) unsweetened coconut milk, 1/4 cup brown sugar, 1/2 tsp pumpkin pie spice, and salt. In 12-inch nonstick skillet, heat 1 tsp vegetable oil on medium heat. Soak 4 thick slices brioche or challah bread in egg mixture, letting excess drip off; add to skillet. Sprinkle each slice with 2 tbsp sweetened shredded coconut; press to adhere. Cook four minutes or until bottom of the bread is deep golden brown, turn slices over; cook 2 minutes or until coconut flakes are deep golden brown. Transfer to a parchment lined cookie sheet and keep warm in a 300° oven. Repeat with 4 more slices of bread.

I truly find that quality time on fathers day is all your dad really needs. Even if you live far away, a simple phone call can mean the world.
