Thursday Thoughts

Today is my Friday! I took off tomorrow to head down to NYC for the weekend and I’m so excited. Needless to say I probably wont have much time to update, so I figured I would do a quick post today.

While I’m excited about going away for the weekend, I’ll be heading down with my father and leaving Elliott behind ūüė¶ Tonight we plan to grill a¬†pizza and have drinks on the deck. It’s just so nice to be outdoors in warm weather. Tomorrow I’ll get up early and take a train down, one of the benefits of living in upstate NY.

Homemade Pizza Dough
Source: ¬†The pizza dough I’ve made forever …

Ingredients

  • 1 c. warm water
  • 2 tsp. granulated sugar
  • 1 1/4 oz. package active dry yeast
  • 3 c. all-purpose flour
  • 1 tsp. salt
  • 2 T. extra virgin olive oil

Directions

  1. Combine warm water, sugar, and yeast in a small bowl to proof the yeast. {Proofing dissolves the yeast and prepares it for use in the dough, as well as proves its active and alive so you know your dough will rise. You should see a bit of foam or tiny bubbles begin to form on the top of the yeast mixture after a few minutes. Use water that is 100-110 degrees F, which means it should feel just slightly warm to your fingers. Hotter water will kill the yeast.}
  2. In a large mixing bowl, combine flour and salt. Make a well in the center; pour in yeast mixture and olive oil. Stir until a soft dough forms. Turn the soft dough out onto a lightly floured surface and knead for about 5 minutes until smooth and springy.
  3. Place dough in a large bowl that’s been lightly coated with olive oil. Cover bowl with plastic wrap and set aside in a warm, draft-free place until nearly doubled in size.
  4. Punch down risen dough and let rest for 10 minutes. On a lightly floured surface, use your hands and a rolling pin to gently shape dough into a round or rectangular crust.
  5. Top your pizza and bake at 400 degrees for about 25 minutes.
