I can’t believe tomorrow is Monday again, this weekend flew by! Just thought I’d post a quick update on the past 3 days.
I had a cozy Friday at home with the boy, pictured above in my favorite flannel shirt of his (so soft). We watched movies, and i did some spa pampering, followed by a few beers and pizza.
After our cozy Friday, we met up with my best friend of 20 years and her new boyfriend for drinks and games, which turned into beer pong. Its such a mood lifter just spending time with loved ones, and i am incredibly grateful for the amazing people i have in my life. It also reminded me that spring is just around the corner and i can’t wait for warm weather and lots of gatherings at our new house (we upgraded to a huge, private backyard) outside by the campfire.
Today has been eventful. We had a heat wave here in New York (35 degrees!:)) so after sleeping in all morning me and the beau decided to get productive. We stopped at Starbucks for an iced coffee and made our way to home depot. 100 dollars later we had some gardening supplies and the necessities to put in a front walkway.
I certainly got my workout in by “tamping” the stone to compact it. You literally use this long pole with a heavy weight at the bottom of it by picking it up and slamming it into the path! It was much harder than i thought it would be.
We then went inside to plant one of the many vegetable packets i bought. We chose basil because it can be kept indoor and we use it for everything. I cant wait for our garden this year, so far we have rosemary, sage, parsley, peppers, tomato, cucumber, zucchini, peas, brussel sprouts, lavender, onion, and chives. I went a little overboard today considering we cant even plant any of these, but i love my spices (since i don’t cook with salt or butter) and can’t wait to pick up more veggies. Just seeing green in my house improves my mood and reminds me spring is right around the corner.
Next i did some meal prepping. Since the week is always so busy, i like to make sure i’m prepared to make good decisions on the go. We went to the store and grabbed some groceries. I have a salad every single weekday for lunch, it keeps me full, in shape, and i dont suffer any carb crashes where i just want to sleep. Plus i get most of my nutrients during that meal. I usually start with a salad made of baby spinach and will add carrots, broccoli, snap peas, mushroom, peppers, cucumbers, and chick peas. This week im adding chicken because elliott is having salads too and he loves the protein. Yum! This week im also having plain greek yogurt with one tablespoon nut butter and 1/4 cup homemade granola.
This picture is terrible quality but is of my 15 minute granola. So easy, and delicious. Start by preheating oven to 300°
I then added one tsp coconut oil to a pan on medium heat and let warm for one minute. Next add 1/4 cup peppitas (pumpkin seed), and 1/4 cup sliced almonds. Toast for 3 minutes and remove from heat to cool.
Place 1tbsp coconut oil, 1 cup plain oats, 1tbsp flax seed, 1tsp vanilla extract, a pinch of salt, 2 tbsp raw organic honey, and 1tbsp pure maple syrup (or just 3 total tbsp honey) in a medium bowl. Add the toasted mix of almonds and peppitas and mix with hands until coconut oil is melted and evenly distributed, this will be messy.
Spread on baking sheet in a thin layer and bake for 10 minutes! Enjoy.
Finishing the weekend with a glass of wine and the academy awards. I cant wait to see what everybody is wearing. Thanks for reading about my boring weekend haha hope every one enjoyed theirs as well.
